Four new recipes for a Sunday

I've been a little sick of eating the same things over and over again so I've been keeping my eyes open for new recipes that are easy, affordable, Gluten Free and yummy! I've gotten in the habit of batch cooking my food on Sundays so I don't have to cook for myself every night.

I ended up trying four new recipes today! Three came out yummy. One is still cooking.

Creamy watermelon salad


Really good, and very sweet! I used a little extra feta cheese, omitted the onions and used just parsley, no cilantro. Link to the recipe. 



Baked tofu


I've only tried making tofu a few times and it's never come out well, but this did! I stuck to the recipe, except instead of pouring the soy sauce directly on the tofu I dipped it in instead. I used gluten free soy sauce. Link to the recipe. 




Quinoa salad with spicy peanut dressing


I love quinoa. Let me say it again, I LOVE quinoa. Super easy to make, cooks just like rice. I used sunflower seed butter instead of peanut butter, since that's what I had. I also added some celery and black beans. Link to the recipe. 


Quinoa chicken 


This is cooking in the oven right now, since I wanted to eat it tonight. I made the quinoa separately. It's an interesting combination of ingredients. Again I used sunflower seed butter and gluten free soy sauce, and omitted the onions, and added some bell peppers. I used real orange juice instead of concentrate. Link to the recipe.

  2. It came out really well!! I baked it in the oven for 90 minutes and the chicken came out really tender!
